I had wanted to try out making Pandan Chicken using oven. This is a healthier and hassle free way of making this dish. This recipe is a easy and fast method. The traditional way of making this dish require blending herbs and spices and marinate it. Instead of that, I use spices powder to achieve the fragrance and taste Pandan Chicken should be.
Ingredients
1. Small chicken drumstick-500g ( can opt for boneless chicken thigh )
2. Sesame Oil- 3 tablespoom
3. Turmeric Powder- 2 teaspoon
4. Coriander Powder-1 teaspoon
5. Ginger paste- 2 teaspoon
6. Salt- 2 teaspoon
7. Sugar- 1 tablespoon
8. Corn flour- 2 tablespoon
8. Pandan leaves - Sufficient to wrap all the chickens
9. Toothpick- For holding the pandan leaves on the chicken
Method
1. Wash all the pandan leaves and leave it to dry.
2. Put chicken in a bowl, mixing turmeric powder, coriander powder, ginger paste, salt, sugar, sesame oil. Mix well using hand. Give it a good massage so that the spices could properly coated.
3. Put in corn flour and give it a good mix. (Note: Mixing the corn flour after the spices allows the chicken to be properly marinated.)
4. Leave it at least 30 min before wrapping it with the pandan.
5. Easiest way to wrap the chicken is coiling the pandan leaves to the drumstick and secure it with toothpick.
6. Preheat the oven at 200 degree. Put it to the oven and bake till you could see some char at the edges of the chicken. This would be around 30 min for my oven. You could also put a bit of oil to the baking tray
