Korean Street Sandwich

Korean street sandwich is always the one I wanted to try out. The experience of having a warm and flavorful sandwich at the breakfast cart was always the best memories ever.
Doing it is very easy and healthy as there are abundant of vegetables inside.

Ingredients
1) Wholemeal bread - 3 Slices
2) Butter
3) Carrot- julienne
4) Cabbage- juilinne
5) Yellow Onion-Sliced
6) Spring onion- chopped
7) Cucumber-Sliced
8) Egg- 2 nos
9) Salt- 1 pinch
For the sauce
1) Ketchup
2) Mayonnaise
3) Sugar
Instructions
1) In a bowl, mix carrot, cabbage, yellow onion, spring onion,salt and egg. Mix it thoroughly. The egg might seems not enough to cover all the vegetables, but its alright. You just need a thin film of egg coating all the vegetables. (Leave some cabbage and carrot, not to mix in the egg batter, this is for the sandwich topping later on)
2) In a hot pan, melt some butter and put in slices of bread. Careful not to burn it. You just need to roughly toast it.
3) After removing the bread, put a bit of butter and pour in the egg,vegetable mixture. Try to shape it to slight rectangular shape so that it is easier to put on the bread.
Fry both sides of the egg till fully cooked.
4) Remove egg from pan. Now it is time to assemble it. First, put a slice of bread, and put on some ketchup with a sugar sprinkled on it. Topped with the half of the egg and squeeze some mayonnaise on it.
5) After that, place another slice of bread, and assemble the cucumber on top. Put another half of the egg to the second layer and put the raw cabbage, carrot mixture to it. Squeeze some mayonnaise and finally, place the bread on top of it.
6) You may need to wrap the sandwich with parchment paper and cut it to half for easy eating.
